Georgia was the first place we traveled when travel started opening up after COVID. It was early summer 2021, and I'm still not over it. We've been to Georgia in warm weather, and back again for skiing in the cold. Georgia is the oldest wine-producing region of the world - and you can't take a trip to Georgia without trying the wine. Additionally, Georgian cuisine is pretty much made up of exclusively bread and cheese - and it can't be beat.
Tbilisi is the capital of Georgia. The city is full of beautiful, old, architecture in a very European-feeling way. It's beautiful. And, very walkable. However, a trip to Georgia would not be complete without a drive up into the mountains. Be careful - the roads are narrow, and winding and hilly, and the locals drive like it's straight. However, the drive is worth it. In the summer, it's lush green mountains full of hiking and paragliding (if you're feeling adventurous). And in the winter, the mountains are completed snow-covered, with nice trails, fresh powder, and the cheapest ski lift tickets on this side of the Mississippi.

Restaurant Chabarukhi (for Khinkali & Khachapuri)
You can't miss Georgia's two best food - khinkali and khachapuri. Khinkali is a Georgian dumpling typically stuffed with meat or potatoes and spices. It's almost like a soup dumpling on the inside, so don't be afraid to slurp! And, don't eat the knobs! Nothing bad will happen to you, but it's a dead giveaway that you don't know what you're doing. Khachapuri is a traditional Georgian cheese-filled bread. It's typically served in the shape of a boat - but also can come in a round, pizza-like shape. Sometimes, it has an egg in the middle. Try it wherever you are - but this restaurant on the way up into the mountains has the best.

Any Wine Bar
Georgia is known for their wine. Don't miss out on the "orange" wine in particular! This is white wine, made from green grapes, however, the skins are left on the grapes throughout the fermentation process, which gives the wine its orange color.
